Ingredients: three cups of fresh shredded zucchini squash or three cups of chopped spinach (fresh or frozen), one cup of baking mix (such as Bisquick or Jiffy), five eggs, two cups of grated cheese (your choice), one half cup of vegetable oil, one half teaspoon of salt. Beat the eggs, then mix in all the other ingredients. Pour into a well greased pan and bake.* Optional ingredients can be added as well such as mushrooms, chopped onions, fried bacon, cooked sausage, etc..
