A recipe using inexpensive shredded imitation crabmeat in the preparation of crab cakes, that is as least as delicious as using real crabmeat , is provided with the following recipe that was requested and provided by a family member. Ingredients: One pound of shredded imitation crabmeat, one quarter cup of breadcrumbs, two eggs, three tablespoons of mayonnaise, one teaspoon of seafood seasoning, one tablespoon of Worcestershire sauce, two teaspoons of lemon juice, two tablespoons of Dijon mustard, and two tablespoons of parsley. Blend together all of the ingredients except for the imitation crabmeat and the breadcrumbs. Add the breadcrumbs and mix well. Add the imitation crabmeat and blend until well distributed. Refrigerate for two hours. Mold the imitation crab blend into single serving patties. Saute’ in butter on medium heat until golden brown on each side. Serve with an equal mixture of Dijon mustard and mayonnaise blended sauce.
